Linda's Favorite Appetizer's
Mexican Dip With Tortilla Chips
Spread evenly on round plate, in order, one large tub soft cream cheese, 3/4 jar hot salsa, then top with 3-4 cups shredded cheddar cheese and pat down. Then sprinkle evenly with diced, green peppers, onions and tomato's. Serve with tortilla chips. (Round tortilla chips are best) This dip is awesome.....empty plate every time!!!
Ham Roll-Ups
Use lunchmeat ham slices, the long rectangular type. Take one slice at a time, spread soft cream cheese on the short edge, about 1/2 inch thick. (You can also create yummy variations by adding either a green onion cut to size or a dill pickle) Then roll up the ham (starting at the edge that has the cream cheese) and use 5 toothpicks, evenly spread out, to secure the roll-up. Then slice roll-up into 5 even pieces, with toothpick in each piece.
Stuffed Mushrooms
Preheat oven to 375 degrees. Take fresh mushrooms, and remove the stems. Use hot breakfast sausage roll, and stuff a dollop of sausage into each mushroom cap. Baste with butter in oven for approx. 45 minutes.
Spinach Dip with Ritz Chips
Spinach dip from the grocery deli is the easiest way to go and serve with Ritz Chips (not crackers). They're new and come in a bag and are already a crowd favorite with my friends and family.
Caribbean Jerk Chicken Pasta with Garlic Toast
2 boneless, skinless chicken breasts
Spiced Caribbean Jerk marinade (KC Masterpiece)
box bowtie pasta
large package fresh, sliced mushrooms
bunch fresh asparagus
jar of Alfredo (or Garlic Alfredo) sauce
Spicy Mrs. Dash seasoning
box frozen garlic toast slices
Marinade chicken breasts in large Ziplock baggie, according to directions. Grill or broil chicken breasts until done, then cut into bite-size pieces. Cook bowtie pasta following directions on box. Steam asparagus until tender, then cut into approx 1 inch pieces. Sauté mushrooms in butter, then drain excess juices. In large pot, over low heat, combine Alfredo sauce, pasta, chicken, mushrooms, and asparagus. Season to taste with Spicy Mrs. Dash. Serve hot with garlic toast.
Tossed Salad
bag salad with mixed greens
small can (drained) mandarin oranges
1/2 cup almond slivers
salad dressing (your choice)
Combine above ingredients, serve chilled with dressing of your choice.
Big Indian's Slow Cooked Kielbasa
You'll need: Large Crock Pot
4-6 rinds of smoked or polska kielbasa (Hillshire farms or Smithfield's)
one large, chopped onion
one can drained chick peas (garbonzo beans)
large jar of sauerkraut
reg. size bottle BBQ sauce (Open Pit)
salt & pepper
Extra spicy Mrs. Dash (optional)
Combine in large crock pot, sauerkraut, drained chick peas, chopped onion, BBQ sauce, salt, pepper and spicy Mrs. Dash. Cut kielbasa into 2-3 inch pieces and add into crock pot. Set crock pot on high, and slow cook for 6-8 hours. ENJOY!!
Chocolate Pudding Shots (for grownups ONLY!)
2 small boxes of instant chocolate pudding (Can use sugar-free)
1 cup milk
3/4 cup vodka
1/4 cup Kailua
Mix above ingredients together well.
Fold in: 2 cups Cool Whip
Spoon into little shot cups and cover with lids and FREEZE then at least 4 hours.
Keep frozen until serving them, and top with canned whip cream and ENJOY!!!! |
